Cooking and Handling

Not sure how to cook those SCF sausages you triumphantly carried home from your local purveyor of fine goods, pleased as peaches at the prospect of supporting small farms in such a delicious manner? Don't worry, it's easy!

Fully Cooked Sausage

Some of our sausages (our Beer Bratwurst, for example) are fully cooked at our plant in Kennebunk - just heat and serve! Look for "Fully Cooked" on the label or check the product page on our website. We like to heat these puppies up in a skillet with a little bit of oil on medium heat, 5 - 7 minutes per side. You can also grill, bake, broil, boil, or steam... pick your favorite method for making cold things hot. Whatever path you choose, best to use these up within 7 days of opening the package.

Raw (Homegrown) Sausage

All of our Homegrown sausages are packaged raw - be sure to cook them thoroughly before serving. And when we say thoroughly, we specifically mean to an internal temperature of 155F. We like to cook these in a skillet on medium heat for a couple minutes on each side to brown them, then finish in an oven preheated to 250F. The key is to keep it "low and slow", don't overcook them, and let 'em rest for 5 minutes before slicing.
